Thanksgiving headache, favorite recipes got lost when we moved.

This year, I am going to be cooking Thanksgiving dinner for my family including my parents. Last year, my father did the honors and, well, it was ok, but everything was prepared from a box. So I volunteered this time.

Problem is when I went to find my recipes, they were MIA, probably lost when we moved. Not that they would have been much help, there are a few dietary restrictions I have to work with now. For example, I usually make oyster stuffing. My mother can't eat anything like oysters, she might choke. My father's on a sodium restriction and my husband is allergic to nuts. Additionally, my eldest child is the pickiest eater on the planet. The only traditional Thanksgiving food she will eat are the rolls. Last year, to save the peace, we fixed her a pizza.

Thanksgiving is my absolute favorite holiday, mostly because of the food. I really want to do a home-cooked meal, but I don't have time to search through magazines and the like trying to replace or adapt my old recipes. (This is where I finally get to the point) What are some of your favorite holiday recipes? It doesn't have to be Thanksgiving necessarily, any special recipe will work. I would appreciate it if you either post them here or email them to Kitten_eyes@literotica.com. Cookie recipes are especially welcome, my husband lives on cookies. Anyone who can help with a fussy eater will be doubly blessed. Thanks.

One that pops into my mind is the ham that I am fixing for dinner tonight,,,

Any ham of your choice ( pre-cooked or not ) I use an uncooked bone-in butt usually about 5-8 lbs ( less sodium that way )

Do not trim the ham, with the cut side down on a baking rack in a deep pan, score the fat/skin surfaces about an inch apart and at angles, press a whole clove into each intersection, place the ham into your oven on a mid level rack following the cooking directions provided by the vendor ( usually 325 degrees and 17 - 20 minutes per pound) or until the internal temp is 140 degrees.

Allow the ham to cook for about 15-20 minutes before applying the glaze and only apply a small amount, then apply more glaze at about 15 minute intervals until there is about 30 minutes or so left to cook, do not apply any glaze in the last 30 minutes, Reserve any glaze and heat to a boil in a sauce pan, allow the glaze to thicken slightly and serve with the sliced ham.

Orange honey mustard glaze:
1/4 cup dry mustard
1 1/2 cup honey ( you may use brown sugar instead of honey )
2/3 cup fresh or frozen orange juice w/o any added water
3 or 4 tablespoons of orange rind diced very finely
3 tblspn cinamon

I usually serve this with a cranberry & orange relish ( my g/f is allegeric to nuts so I make this with and without finely chopped pecans)

1 can of prepared whole berry cranberry sauce
2 med oranges segumented ( not canned )and cubed
1 cup crushed pineapple
1/4 cup brown sugar ( adjust to taste )
1/3 cup Pecans (optional)

mix all ingredients in a glass bowl with a metal spoon, the wholeberry sauce will break down rather than being lumpy.
Cover with plastic wrap and allow to cool in the refrig for 2 hours or more

My thanksgiving specialty is Pumpkin Pie as given on the label of Libby's brand canned pumpkin. I usually substitute brown sugar for half of the sugar called for (eg half plain sugar, and half light brown sugar.)

There's a recipe for a fruit stuffing here that sounds good. You'll have to omit the nuts, but everything else should be OK.

Get the fussy eater to help make things. Most kids will eat what they help cook.
 
Thank you, everyone. NEBBW, I'm looking for casserole, stuffing, vegetable, dessert, and cookie recipes. We always have the traditional turkey, gravy, mashed potatoes, but I want something unique this year.

Don't know if you're a big peanut butter fan

But I am! Here's my fav. pie.

Peanut butter pie

8 oz. soft cream cheese
1 C. peanut butter
1 C. of powdered sugar
8 oz. of thawed whipped cream
1 graham cracker crust (6 or 9 inch)

In large bowl, beat cream cheese until fluffy.
Beat in peanut butter and sugar.
Fold in whipped cream.
Spoon into crust.
Then put it in the fridge for about 5 hours.


I love this stuff, just don't let me near one while I'm alone.

This is not a Thanksgiving recipe,

but picky kids will love it, and it doesn't take very long to make.

Brown one pound of fairly lean ground beef doused generously with worcestershire sauce, chopping it into small chunks.

Dump the beef in a strainer, leave it alone.

Pour one can of Campbell's Chicken Gumbo Soup into frying pan, at medium high heat, add the following ingredients.

Generous squirt of ketchup (about 3/4 cup)
Equal amount of barbeque sauce (any kind will do)
Little squirt of mustard (about one teaspoon)
Two slices of american cheese
One tablespoon of sugar
Two good shakes of the worcestershire
Add the beef, stir it up, and let it bubble for about five minutes stirring frequently.
Reduce heat to low and cook to desired consistency, uncovered. Have a beer.

Serve on hamburger buns with a slice of cheese. Fritos are good for scooping. Some people call these barbeques, I call them really good sloppy joes. Serves four.

The kids will like 'em, I guarrantee.

I'm sorry to say I can't help with the picky eater syndrome.

Kitten Eyes, I have an entire book case overflowing with recipies not to mention the ones that are loose and running through the kitchen and basement. I'll be happy to share!!!

My question is, can your mother not eat the oysters due to texture but you still want the flavor? Until I became allergic to oysters (and many other wonderful seafoods) my mother would make an oyster stuffing "milder" by just using the juice in one pan of stuffing. Now we use sage and onions and celery and granny smith apples in our home made bread stuffing.

On the sodium restriction, is your father able to talk to his physician about the holiday and (maybe?) have a medication adjustment for that day to help combat the situation? My nephew often gets a teensy extra dose of Lasix on the days when he may have had too much summer sausage at family get togethers.

I came across a great recipe for yams, particularly for people who have to watch sugar.

Peel four yams or sweet potatoes; slice them no more than 1/4 inch thick. Peel, core and clice four Granny Smith (or other tart or baking type) apples. Toss them with a drizzle of olive oil, a tiny bit of salt and pepper, and about a half teaspoon cinnamon. Put in a glass baking dish, and bake at 350 degrees for about an hour.

They are really good, and taste considerably more sinful than they look.

Stormy - no nuts due to allergies, but my sister-in-law is a peanut butter fanatic, I emailed the recipe to her.

Earthmuffin - Lol, one can never have too many cookie recipes. Hubby says thanks and yes, he loves brownies too.
