To paraphrase Anthony Bourdain. Greasy, tasty meaty goodness.

2 pounds of Neck Bones. (Make sure they have plenty of meat on them. Cheaper than Ox Tails.)

1 can Cream of Mushroom Soup.

1 can Campbells French Onion Soup.

6 slices of Bacon cut small.

four Chili Japones or other mildish Chili's crumbled.

3 cloves Garlic grated

1 cup cheap red wine.

2 cups water.

2 cups noodles. (I used Egg Noodles.)

French Bread.

Dump all but the noodles and bread into a crock pot and turn it on low. Let it cook for at least 4-6 hours. (The longer the better.)

Pull the bones out of the pot and remove the meat. (It should be pretty much falling off.) Shred the meat and return it to the pot. Add the noodles and let them cook until they are soft.

Serve in bowls with toasted French Bread.

It appears to be 'Oxtail Soup,' save for the use of neck bones instead of 'oxtail.' A good substitution, given the cost factor.

More of a stew than a soup, although if you add more water it could be a soup. (Much like any stew.)

My Ox Tail Soup is from a recipe posted to me by Stella and is a bit different. (Just as tasty though.)

As for the cost factor. I'll make soup out of anything cheap. (I've even made soup out of things like Spam.)

A little trick I have because I tend to use a lot of stock is a large Freezer Bag or two. Every time I make something with bones in it, ie. Ham, Chops, Steak, you name it. The bones end up in the bag and frozen until I need to make stock. (The bag in the freezer right now has a Ham Bone, two bones from T-Bones, two bones from Pork Chops and a bunch of Chicken Wing Tips.)
