This morning I decided I wanted to make a bit of a treat for us.

I cut up a largish section of London Broil (Nice and lean.) into one inch cubes. These were dumped into a bowl and then sprinkled with a generous shaking of "Everglades Heat". (This was mixed in nice and easy by hand so every side of the cubes was well covered.) The bowl was then covered and put in the fridge for the day.

This evening I skewered the meat as the grill heated. (Yes just the meat.) As the meat cooked for a bit I chopped up a Vidalia Onion and a Bell Pepper.

Once the meat was cooked about halfway it was pulled off the grill and allowed to cool for a bit. (Makes it easier to handle.) Now I started threading the meat back onto the skewers along with the Onion and Pepper. When this was done the Kebabs were given a light spraying with Olive Oil then sprinkled lightly with even more of the "Everglades Heat". Back onto the grill over low heat they went.

It took a bit to cook them over the low heat but oh man was it worth it.
