Easier than looking up the actual scientific reason.

well, basically it goes like this. the color of the sky, no matter what time of day it is, is created when particles in the air cause a wavelength of white light to scatter into it's composite parts. most of the time the blue light is the dominant color in the sky because it has a very short wavelength and is scattered more easily by the particles. actually, violet light is scattered more but it's easier for human eyes to see blue, so we do.

however, at sunset (and sunrise) the angle of the light is much greater, and so the light has to travel a lot farther. by the time the light reaches your eyes it has been effectively "diluted." all the blue (and violet and other short wavelength) light has been scattered, so red and orange and such are the only colors of light left in the beam because they have such a long wavelength.
