I write to eat, teach writing to pay bills, and don't do either very well - apparently. Anyway, I write via request in many genre. Much of my paid work is in technical writing - that is always by request. A couple of longer works in a semi fact based series were also requested. So, if you want something in particular - just ask; lots of folks around here ready to fill your need - at least that is my perception.

If you want a story for your personal collection, and no one else reads it, then I know several authors who do that. I'm one of them. If you want a story that is just requested, and goes out for public consumption, well, I'm sure there are authors who would take a crack at it.
