Do you really think the technology exists to read EVERYBODY's email? Nah. Even the government's not that stupid or overfunded. Too damn much traffic to read all the plates.
If you're really worried then get yourself a digital signature. If your mail gets opened on the way the recipient will get a very clear message.

Actually, I don't much like the idea of governments having too much power to prowl on people who haven't and never will commit a crime...okay...a major crime. Hell, the FBI knew it had a traitor in its midst...even knew his name...didn't need to do any super sleuthing or tap any phones...still they couldn't figure it out.

Sigh...they never learn
I was living in Oklahoma City when the Murrah building was bombed. The first thing they did when they realised it was a bomb (didn't take too long really) was begin stopping all persons of Middle Eastern appearance (you can't be more specific than that in Oklahoma) at the airports, bus stations, and along highways. It was several days of terror and humiliation for these people. No evidence of any kind, just assumed it was Mid Eastern terrorist.
Turns out, of course, that it was a good ole boy and the ONLY reason he got caught was that he was driving a beat up Ford with expired plates. Hell, they didn't even arrest him for the bombing. The trooper noticed he was carrying a gun and when he couldn't produce a permit he was arrested and put in jail in a small city north of Oklahoma City. It was days before they found out who he really was and what he was suspected of doing.
How does the saying go? Keep your friends close and keep your enemies closer. It's a dangerous game to think you actually know who your enemies are and what they might be saying.
Guessing wrong in OKC wasn't a fluke either. Seems the bright boys in the CIA were so enamoured with the Shah of Iran that they didn't even notice a revolution was brewing. What could possibly have distracted them from noticing something major like that? They were up north busily watching Soviet missle tests...the true enemy. The "evil" empire as Ronnie called them.
