Smoked fish dip

I live in the south and have had smoked fish dip at restaurants and some were great and others were like some mayonnaise salad. I had a desire to make some of mine own with the touches I like.

As a happy accident I went to a Farmer's Market and they had a smoked meat booth. They had smoked mullet and I decided it was my time to make my own fish dip.

So now I have my fish and need a recipe. I Google smoked fish dip and found many. To very much my surprise the common ingredient was creme cheese. I made it with creme cheese, Old Bay, onion powder, garlic salt and dill weed.
Next time I will use garlic powder instead of garlic salt because it is a little too salty.

Does anyone have any experience or suggestions?
 
Used to get smoked tuna dip a good bit when I lived in Fl. Miss that, so yummy:)

I have no recipes though.:(
 
I have never had a fish dip. I thought you were going to dip your fish in something. Sounds good.

No, the fish dip is something you spread on something else like a cracker. bread or toast. Think of it like ham spread with no taste in common just texture
 
Smoked fish dip sounds like something that would pair very well with a garlic bagel.
 
It's nothing special, but I do make simple smoked mackerel dip, it's just mackerel, enough non fat creme fraiche to make it dippy, pinch of chilli flakes, squeeze of lemon and fresh coriander to taste, all blitzed very briefly. Usually I'd either have it with home made melba toast, on chicory leaves or on celery sticks.
 
Is the dip salty? My first thought was for an everything bagel, but decided that it would likely be overkill.

As I said earlier it is just a bit too salty for my taste. Next time I will make it with garlic powder or fresh roasted garlic.
 
Try smoked salmon, and here's some ingredients to play around with in addition to yours.
Minced green onions.
Lemon
Horsey sauce if you like kick.
Try and form into a ball in plastic wrap, chill several hours or overnight and then roll in pecans.

"blitzed"? Pardon my ignorance.

All good ideas except the pecans. I just don't care for them in my spreads.

You know when I started this thread I expected it to die a quick, fast death. Thanks for all your ideas and replies.
 
Smoked fish cob loaf.

1 cob loaf. Cut off the top, pull out all the bread from the center and pop it in the oven or bbq until it's crisp.

Mix your smoked mullet, sour cream, cream cheese, white onion and a small packet of onion dip in a bowl.

Throw it in the cob. Slice and toast up a french stick for dipping and you're done :)

Add whatever you like. Corn or spinach etc.
