OK, quick question - does anyone have a *simple* burger mix they like? Basically, I'll be heading home tonight, I have a packet of beef mince in the fridge, and I fancy trying my hand at a few burgers just for something different.

I'll *not* be stopping at any shops on the way, hence the 'simple' requirement :) I have a resonably stocked kitchen, but I'm fresh out of garlic cloves, olives, roasted peppers and obscure cheese :D

Now, as an example, the best one I've found so far is basically the beef, finely chopped onion, bit of pepper, and 2 tablespoons of Soy sauce.
Mix, cook, enjoy.

It's not masterchef I freely admit

I add 1 tbs of Worcestershire sauce per pound. I dice onions to about 1/8th inch cubes - very finely, garlic (in whatever form you prefer), cayenne, pepper, and salt. Soy acquires an odd taste when it burns or chars. The purpose for adding really fine onions is to allow you to cook longer without making meat tough - so using Soy seems odd.

In any case let is sit for 15 minutes. Preheat you pan or grill to hot.

Fun stuff to add:

Put oatmeal through a food processor and add for a more bready patty.

Reduce balsamic vinegar and sugar to make a syrupy sauce. (Fair warning, your kitchen will smell like vinegar - I love it, others less so).

Cumin makes anything taste smoky.

All good ideas, you can also use breadcrumbs, italian breadcrumbs if you want to add a little more flavour to it, onions are always good, also an egg or two.

When I make burgers, I generally just add a little salt and pepper. Works fine. If the meat is really lean I add some olive oil too.

Simple is always good.

Regards

You can try adding one or a few of these ingredients:

Small Cubed Cheese
A1 Sauce
Mustard
Diced Onion
Onion Soup Mix
Egg
Bread Crumbs
Worcestshire

Excellent stuff - and some good ideas. I didn't get to make them in the end, I was late getting home and my Ex had already cooked the mince off with some gravey. Not that I'm complaining - a nice simple mince + gravey and some mashed potato is what I grew up with :)

I didn't actually know about Soy sauce getting a different taste if it burns, and I thought it was an interesting substitute for Salt - maybe I'll rethink that one.

The oil is a good ida - I tend to only get lean meat, and I know that it's often recommended you add fattier cuts for moisture.

Someone else messaged me about cumin, so that seems to be a good one, and I had thought about the breadcrumbs (or oatmeal), but again I was worried about it ending up too dry.

Cheers folks

beer

if you add in a can of beer and onions... thats all you really need. makes awesome burgers

the other recipes sound great, and i've tried several variations of them over time, but the burgers i get the most compliments on are 1 tbsp of Worcestershire sauce and 1 tbsp of hot sauce (I prefer franks, but use whatever kind you like EXCEPT tabasco...tabasco brings only heat and no flavor to the table) per pound of meat...of course, salt and pepper to taste as well...but becuase of the hot saucse, you can ease up on the salt.
