Riff: fluffy pancakes into crepes

2 large eggs
3/4 cup milk
1/2 cup water
1 cup flour
3 tablespoons melted butter
Butter, for coating the pan

I use a blender to mix all the ingredients, <takes about 7-8 seconds, any longer and you'll create gluten strands>
The lack of baking powder reduces the leavening.
Also, and this is important, let your mixture rest for an hour. This cuts down on air<which is also a leavener>

then you can either heat a nonstick pan or a non-stick griddle, butter it<important even though it's non-stick>

pour into the pan, move the pan around until it is spread out, flip after 30 seconds.

You'll have perfect crepes.

If you want to have sweeter crepes add some vanilla and a tablespoon or two of sugar.

More savory crepes, pinch of salt and 1/4 cup of chopped herbs<anything but rosemary cause it sticks in your teeth>

mmm i've got tummy grumblies now.

Sometimes I put a little pinch of nutmeg in along with the vanilla or some orange zest.
 
a little bit of liqueur snazzes them up too ;)

I still have another quarter of a head of steamed cabbage. (with carraway seeds and pepper vinegar- sugar, it's good).

I made some pancakes last night- I thought they were too "cakey" and I prefer crepes.

I like to cook. I am not a chef. I don't even consider cooking a "hobby." But I like good food.

And good pussy never hurt anyone either (Damn, I need to tell that to my therapist!)

She's taking a nap right now. When she wakes up, she will want to eat and then to play. My tape is ready. And I am ready to share her with the world. :)

the cakey thing is from having to many leaveners<air, baking powder/soda, and eggs> If you let the batter rest that gets rid of the air, and if you get rid of the soda it won't make them cakey. Eggs are enough. If you do it in the blender, it's the perfect mixer. It cuts the ingredients together nicely and won't over work your batter. It's a science thing, as is all baking.
 
When I worked as a freshman in college with Chef Jim (Hyde Park dude) and he would make me bake, he told me the same thing.

Baking is science. Cooking is art.

I miss Jim. He caught me smoking a joint in the outside walk-in and got pissed at me because I didn't ask him along.

I wish I could remember his last name. I'd look him up and ask him how is he doing.
 
I saw one of my old chefs on the cooking channel a month or so ago in a food competition.<he was the one who recommended me to the RTR> I got hold of him, it was really great. Some people, teachers, mentors, they just change your life forever.

I tripled your recipe, because of a teenaged food processor. I am also using a cast iron skillet, and it seems to be doing just fine.

So perk, my cast iron maiden worked just fine. Why use the synthetic-shit skillet? Ooops!, I mean is there an advantage to a non-stick skillet?
