Now this doesn't take long nor does it cost a lot but it sure tastes good.

Get some El Monterey or other brand Chimichanga's. (I prefer the Beef and Chili but the Chicken and Cheese are good too.)

Buy a jar of chunky style Salsa. (I use Medium because my wife can't take more.)

A bag of shredded cheese.

For two people:

Preheat oven to 400°F. As the oven heat's place four Chimi's in an oven safe baking dish. When the oven is hot set the Chimi's in for 25 minutes.

At the end of the 25 minutes remove from the oven and cover with a thin layer of cheese, half the jar of Salsa and a thick layer of cheese. Return to oven for roughly 5 minutes or until the cheese is melted.

Remove from oven and let sit for a couple of minutes until the cheese sets just enough to cut with a knife. Serve and enjoy.
