Potluck Dishes/Recipes?

Well, the cornbread muffins and cookies were HUGE hits with parents and munchkins alike tonight. I think both of the recipes will replace the ones we have been using because the cornbread especially was much moister and really didn't need any condiments, plus I think it's particularly easy to adapt to different tastes and textures. I was shocked that a bunch of people were impressed by homemade chocolate chip cookies - I've never bought anything that's so easy to make at the store (especially with a toddler in tow, it's got to take longer to go buy them than whip up a batch).

Our next potluck will be a lunch in January, but we have all of the holiday events coming up and it there's always a party or occasion to bring food on the calendar, so thank you to everyone who's shared thus far, and the more suggestions and recipes, the better! :rose:
 
A tasty way to do corn bread is to heat a greased (crisco) iron skillet in the oven and then pour in the corn bread batter into the hot pan....then continue baking.
 
Delicious but definitly not healthy

We had someone bring this dip for a gathering last week and it was fantastic! After I got the recipe, I really wish I hadn't eaten so much of it. I am going to experiment and see if I can make it at least a little bit healthier.
Mel's Cheese Dip

8 oz. block of cream cheese
1 cup of mayonnaise
4 diced green onions
1 cup shredded sharp cheddar cheese
6 Ritz crackers, crumbled

Melt cream cheese in the microwave slightly, enough to soften and mix with other ingredients. Mix all ingredients together and bake at 350 F for 20 minutes.

1 jar of red pepper jelly
1 jar of bacon bits

Heat the jar of red pepper jelly in the microwave until it thins. Pour over baked cheese mixture. Pour jar of bacon bits on top of jelly. Serve with Ritz crackers.

I think she only brought one box and that wasn't nearly enough crackers


My ideas were to try neufchatel instead of cream cheese, and Greek yogurt instead of mayo.
 
Here is a Basic Cookie recipe that you can put ANYTHING into and it will work

1 1/8 cup All Purpose flour
1 stick butter(room temp)
1/2 c brown sugar
1/4 c sugar
1 tsp baking powder
pinch salt
1/2 tsp vanilla

Blend butter and sugars together, then add 1 egg. Add flour, salt, and baking powder. Mix well ... add vanilla.

Add in whatever (chocolate chips or the like).

Bake 12-15 min @ 350

This has been around the web a few times.. but if you havn't seen it, and bacon is allowed on your table (or turkey bacon ect) .. Or if you're looking for a way out of the doghouse.. or to really please someone(s)....
