Chanukah is an obscure Jewish holiday that came into prominence primarily to pacify Jewish children who have to live in a Christian world. Despite the onslaught of the Little Drummer Boy and countless other songs that fog the mind on Christmas, potato latkes warm the palate and hearts of countless Jewish youngsters; oldsters too.

For those of you that don't know what a latke is, it isn't a character portrayed by Andy Kaufman on Taxi. It is a thin, crisp potato pancake, fried golden brown, in oil, and served with sour cream and/or apple sauce. There is only one word to describe a latke. Delicious!!!

Chanukah starts on Sunday evening (December 10th) and lasts for eight days. Btw, you don't have to be Jewish to enjoy a latke, or two or three.

Agreed, Blue. Tomorrow I'm making them with my students after reading a book about Chanukah. I'm going to have to tell them that latkes are like french fries in order to get them to eat them though :)
 
I'm not jewish but

my mom used to make THE BEST potato pancakes ...... served with applesauce. Yummy!:D


Edit to correct spelling of potato (was potatoe) ....... just call me Ms Quail :p

hehe I remember making those when I was little and in school. It was fun, and I'm sure they'll eat them once they see how fabulous they smell while they're cooking :)

Very simple- just keep in mind that this is for a classful of kids...

1 5lb bag of potatoes
1/2 c. flour
3 eggs
salt (to taste)

peel and grate the potatoes into a bowl- mix in the flour, eggs, and salt. Take the mixture by spoonfuls and fry in oiled frying pan, about 3 minutes on each side. Let cool on paper towels.

They're great plain, with applesauce or with sour cream :)

6 medium potatos
1 small onion (I use a large onion)
2 eggs,slightly beaten
3 tblp. flour or matza meal, more if mixture is too thin
salt and pepper, to taste
1/2 tsp. baking powder


Grate potatos and onion in blender and let stand for 10 minutes so water will rise to the top. Pour off water and stir in eggs with rest of the ingredients.

Heat oil and spoon in the mixture. Brown on both sides until done. Drain well and serve with sour cream and apple sauce.

Enjoy!!!

I'm gonna go buy onion and egg this weekend.. the kiddies and I will make them for Sunday breakfast. I'll let you know how they fare!

we tried it tonight & i give it a two thumbs up

Couldn't wait to try it, I made some for me, my kids and my mom..

My picky eater loved it.

My 'sit anything in front of her and she'll inhale it at the speed of light' eater didn't care for it.

Mom liked and I thought they were delish...
