Bacon Wrapped Mozzarella Sticks

While they cannot be classified as health food, bacon wrapped mozzarella sticks are low carb, gluten free and delicious.

INGREDIENTS

6 part-skim mozzarella sticks, cut in half crosswise
12 slices uncured bacon

INSTRUCTIONS

Remove the cheese wrappers. Place the cheese sticks on a wax-paper-lined tray and freeze for at least four hours. I froze them overnight, the night before I made them.

Preheat your oven to 400 degrees F. Line a large baking sheet with parchment paper.

Partially cook the bacon: place two paper towels on a microwave-safe plate. Place four slices of bacon on top. Cover the bacon with two more paper towels (to prevent splatters). Microwave for 2 minutes. Repeat with the remaining slices. This renders some of the fat and will help the bacon crisp up faster, preventing the cheese from melting away during prolonged baking.

Wrap each half mozzarella stick with a slice of bacon, securing with a toothpick.

Place the wrapped cheese sticks on the prepared baking sheet. Bake until cheese just starts to melt, 5-7 minutes. Serve immediately.

I have a very similar recipe with a twist. The twist is bacon twisted around bacon.

What you do is you take any recipe like the original recipe in the thread for bacon-wrapped whatever and you simply substitute bacon for the whatever.

Preheat your oven to 400 F.
Oil a baking dish or a cast iron skillet.
Season the chicken thighs.
Continue by wrapping each thigh in bacon. One slice of bacon will be enough for one small chicken thigh.
Next place thighs in the baking dish and bake for 30-35minutes or until a thermometer inserted in the chicken reads 165 F.
Broil for 1 minute to cook the bacon more and make it golden.

This part of the recipe would have worked for my.nooner today.
 
Slightly over-grilled smoked bacon on toast, covered with room temperature whipped cream. Cracked black pepper optional.
 
Get some curly parsley, black pepper, cooked bacon, cherry tomatoes, mayo and green onions. Also some frilly toothpicks.

Lay the parsley on a platter. You'll need this to keep the tomatoes from rolling around.

Cut the tops off of the tomatoes and reserve. Use a melon baller to or small spoon to scoop the guts out of the tomatoes. Turn them upside down on a rack with paper towels underneath to catch the juice.

Make the filling. Cut the green onions in small rings, crumble the bacon, and mix those with the mayo and pepper. I've seen similar recipes with grated cheese. I've never tried the cheese.

Fill your tomatoes, put the tops back on and stab with the toothpicks. Put them on the platter and keep in the fridge until ready to serve. Best served within two hours of making.
