Pickles.

My garden produced 600 tomatoes. And sliced up 10 pounds of them to make bread & butter pickles; these are the golf-ball size peewees.

So I put 5 pounds in a glass bowl, with 2 onions, and kosher salt; then let it work for 24 hours. I poured off almost 2 quarts of water that the salt removed. Then I made the brine with sugar, vinegar, and spices, and cooked it all together for a few minutes.

The tomato pickles are pretty good! though not crunchy like cucumber pickles. Its a good use of tomatoes I planned to let rot on the vine.

Way to go! It's always good to find a practical use for something that otherwise would go to waste.

Never heard of that before... sounds (in Rachel Ray's words - not mine) delish! :)

Yep. They taste just like bread & butter cucumber pickles but arent crunchy. And the peewee, immature tomatoes are just the right size.
