Yesterday I decided I was going to make some Jerk Pork.
I dug in the freezer for some Pork Loin. After this was defrosted I cut it into 1-2 inch chunks and then doused these chunks liberaly with home made Jerk Sauce. These were then bagged and tossed in the fridge for 24 hours.
This evening I threaded the chunks of now well marinated Pork onto wet bamboo skewers and then tossed them on the grill over low heat.
This was served with Red Beans and Rice.
Oh man was that a great meal, and I even have enough left over for lunch tomorrow.
