I'm writing a story about a slave, and she has a minder that helps dress her etc. What do I call this person?

That depends on the status of her "minder."

If it's another more exerienced slave it would be her mentor or trainer.

If it's a free employee of her master who is responsible for more slaves than just her it would be an overseer.

If it's an employee dedicated to her alone, it could be her trainer or handler.

If she's a special slave, it could be her maid or or attendant.

If all else fails, just call her the slave's "Minder."
