Okay then, how does this sound to you...

Smoked Chicken Salad with mixed greens, caramelized walnuts, blue cheese, topped with a raspberry vinaigrette.

Wood Oven Roasted Raviolo filled with butternut squash & ricotta cheese, covered with a gorgonzola walnut cream sauce.
 
Vacation was great, ate lots of Chicken and fish and rice and beans, and..... Just about everything else. Lots of tequila, lots of beer & lots of rum. I'm going through my pics right now, and will upload a few maybe tomorrow.

Went to Belize, by way of the Mayan Ruins in the northeast corner of the country, once in belize, the digital camera got stolen, but not before I got all the pics up till then on my laptop. :(

Once we were back to Guatemala, we did lots of things around the city, spent time with lots of old friends and family, and partied a lot more. Woke up this past weekend at a friends beach house on teh Pacific Ocean, and came back for a going away party Saturday night. BTW, on the way home, we saw a Volcano erupting, but I didn't have my camera ready, and couldn't stop. :(

Lots more details, but we'll save that for another time.

Potatoes au gratin a bit later
and asparagus


I'm not sure about dessert yet... I'll have to think about it.
