I'm on a cooking kick...so I'm looking for new recipes. What's your siganture dish, or what do you love to make?

Easter is coming, time to make Spice Ring. I'll post the recipe tomorrow.

Speaking of tomorrow. I'm gonna use the slow cooker and make

Cranberry Pork Roast.

Makes 6-8 servings.

3-4 lb pork roast
salt to taste
pepper to taste
1 cup ground, or finely chopped cranberries
1/4 cup honey
1 tsp grated orange peel
1/8 tsp ground cloves
1/8 tsp ground nutmeg

1. Sprinkle roast with salt and pepper. Place in slow cooker.
2. Combine remaining ingredients. Pour over roast.
3. Cover. Cook on Low 8-10 hours.
 
Mayonnaise Cake

Here is some dessert for you! I'll return with other receipies at a later date.

I personally guarantee that if you can keep this on a counter for a week, without it disappearing, that it will be just as moist as when first cut.

Mayonnaise Cake


3 Cups flour
1 1/2 Cups Sugar
3 tsp Baking Soda
8 Tbs Cocoa, powdered
Dash of salt
3/4 tsp Vanilla
1 1/2 Cups cold water
1 1/4 Cups mayonnaise

Preheat oven to 360 degrees

Put all ingredients in a large mixing bowl and mix until blended. Pour into an UNGREASED Dutch oven type pan.

Bake for 1 hour and then test in center to be sure it is done. Cool in the pan for at least 15 minutes and then remove it to a cake rack to finish cooling.

Frost and enjoy.

I am always the dessert maker, and I'm in the mood for Spring. I'm making a big layer dessert:
Angel Food cake, cut up into bite size pieces
Fresh Blueberries
Fresh Strawberries
Fresh Rasberries
Cool Whip
Keep layering until the bowl's filled to the top!
 
Recipe for the slow cooker

This recipe kicks ass. Seriously.

PEANUT CHICKEN

4 boneless skinless chicken breasts
1 cup low sodium Soya sauce
3/4 cup white sugar
1 cup boiling water
1/2 cup chopped onions
3 cloves garlic, peel & smash but leave "whole"
2 tbsp sesame seeds
1 cup chunky peanut butter (the peanut bits add a nice texture)
1 tsp ground ginger

Place chicken in slow cooker first. Follow with onions, garlic, ginger & sesame seed. Mix boiling water & peanut butter, sugar to melt, add Soya sauce and pour over chicken, etc...(prep time is like 10 minutes)

Cook on "High" for 3-4 hrs. You can leave it on warm after that. The chicken re-freezes well if you want to "repackage" with some veggies and rice or noodles and keep for frozen dinners.

The leftover sauce can be drained off and thickened with a bit of cornstarch if you want.

Serve with steamed rice and veg - simply dee-lish.
