All my knives are razor sharp-and i mean that-if it won't shave my arm it's not sharp enough. It must be that sharp to have the proper feel or for sure you will cut someone. I would NEVER use a knife like that described above(commando knife). Even if only one edge is sharp, under low light conditions and the excitement that abounds in a scene, it's very easy to get confused about which edge is sharp.
there are techniques you can use to let someone know how sharp it is without hurting them. The tip, with the cutting edge up, allows poking or scratching.
The sharp edge can be dragged sideways like a scraper.
You can also use a violet wand with a knife for a really interesting experience.

The knife I'm referring to is a Fairbairn-Sykes Fighting Knife. Nether edge is sharp. That is the way it came from the factory although when issued there were instructions on how to sharpen the edges.

I do agree with njguy55's comment about keeping knives sharp. More people have been cut with dull blades then with sharp ones. All of my working knives are sharp. My few play knives are dull.
