It's Wednesday!

good morning!

not a lot yet - sitting in bed, day off, it's raining and there's lots to do: laundry, shopping, housework, the usual stuff that eats up my day off. don't want to go out in the rain - it's the boring, un-pretty kind and i don't feel very well. lol. plus, i need to go make some comments on the poetry entries in the spring challenge. have you visited them yet? all votes welcome and we need to eliminate half this round, then half again, till we get the 5 to choose from to select the winner.

why are you awake?

I get up at 4:30, I work from 5 to 1. New job from when I was here last. Still doing the same thing, editing medical stuff. Interesting work. Catching up on spelling cancer medication. Most of the names are like:

eritaskinergiqualutamidbinab.

Really, guys? Really!?

I get Friday and Saturday off, and that means possibly sleeping until 8 or 9. We got to bed at 9 pm, he gets up at 4. Sometimes we don't even make it all the way to 9. I get most of my chores done during the week, which is a huge benefit to working at home.

I haven't checked out the poetry challenge, no. I will!

i've mailed H, and i've a pot of fresh-brewed filter coffee, so all is not lost - it's even stopped raining - for now :)

We are surrounded by at least 5.6 million birds. It is definitely spring. Still dark out and there's some crazy noises going on.

It's a good day for a long bicycle ride.

Color me gone.

Oh, enjoy yourself! We're having the same weather here, 73 right now at 7 am. Ulaven's going to take the motorcycle out.

We've got daffodils and tulips and I've got my pansies, so it's a beautiful day.

I am eating home-made cookies for breakfast. This may be the highlight of my day.

It's still Wednesday, but it's bedtime.

Teeth brushed, hair combed, off to bed.

Happy hump day. :)

I apologize. My cookie lust is strong.

I like the thin crispy tuille type cookie.

Crystallized ginger scones.

GINGER SCONES

2 cups all purpose flour
1 Tbsp baking powder
¼ cup sugar
1 tsp salt
4 Tbsp unsalted butter
2 eggs, slightly beaten
1/3 cup heavy cream
½ cup crystallized ginger, chopped
1 egg white, slightly beaten

Preheat oven to 400 degrees

Combine flour, baking powder, sugar and salt. Cut in butter until the mixture resembles small peas.

Add the whole eggs and the cream, stir until the dough forms together. Gather into a ball. Divide in half. Add half the ginger to each piece of dough and knead, adding a little more flour if it is sticky.

Shape into a ball, and then flatten into a disc, cut into 4 wedges.

Arrange 2 inches apart on an unbuttered baking sheet. Brush scones with egg white and dust with sugar.

Bake for 20-25 minutes, until golden brown.
