I have a story about a woman changed by a curse into a centaur who becomes a broodmare on stud farm. Is a centaur coupling with horses within the submission rules? There are, after all, stories here of humans coupling with centaurs.

I'm pretty sure that if it's fictional it's not beastiality.

Same with werewolves and so forth. Not beastiality.
 
My guess is that if it is in 'Non-human' you will be fine.

If the category is 'Incest' however, there may be a problem.
 
Whatever happens, if this one is submitted here, it would be good to receive a report here on how it was received and dealt with by Laurel.
 
The centaur isn't the problem. The horses are. Not going to fly because of that.
 
If it isn’t accepted, you could try making it a unicorn and/or Pegasus farm because mythical creatures usually are okay if I recall correctly.

It's not all that confusing, really. Ability to consent is the primary point. After that, natural existing animals and cosmetically 'modified' versions are forbidden. ( Dogs with feathered tails, the crystal foxes from one of the recent Star Wars flicks, etc. ) Well-established fantasy creatures such as werewolves, centaurs, and unicorns are typically allowed, so long as there is reasonably prevalent evidence in the lore that the creatures are sentient.

If a very specific setting is used, and said creature is not depicted as sentient in the original media — even when other media does — they are off limits. It's similar to the prohibition against aging up characters from a setting who never reached adulthood in the original media.

This typically only applies to Celeb&Fanfic where such stories are supposed to go, but in cases where Laurel didn't recognize the setting, it can apply to whatever category the story ended up in. The odds are high that this will be a rejection after the fact, pointed out by a reader.

A fairly reasonable thought experiment when determining whether something will pass ( assuming demonstrated ability to consent ) is whether a photo of the act delivered to the local police would likely result in an arrest. A dog or horse is going to lead to handcuffs. A mermaid, centaur, or cat-girl is going to result in eye rolls or perhaps suspicion about the person delivering the photo, rather than the person in it.

In this specific example where all participants are non-human, it fails on both primary criteria because one of the participants is an existing normal animal, and not ( at least in the OP description ) demonstrated to be sentient.

This is a pretty good description from what I can tell, but not universal. I've seen some stories here that were basically "mutant squid impregnates woman" with no indication that the squid is any more sapient than the normal Earth varieties. Maybe Laurel decided the vibe was closer to "alien sex" than "farm sex" in that case?

Although, last I heard bestiality was still legal in New Mexico and West Virginia (and until a couple of months ago, Hawaii and Wyoming too). Another of those cases where RL legality doesn't necessarily align with Literotica rules.
