Is it really true that only one person is reviewing all of the stories?

It's mental. That person is doing a great job, but it's still not smart.
I ask because I recently posted two stories at once. One got rejected, for a legitimate reason which I'm not disputing. It's the other one I'm worried about. It's not been reviewed, and I just hope that one rejection isn't a blacklisting (if I'm the only one reviewing, I'm not inclined to review another one that I might have to reject).
Is there some process where I might help with the review process?
 
I found that my second story had gone back to being a draft. Not sure if that's a bug, or my bad. Still, are there any other reviewers?
 
Laurel owns the site and scans all submissions, often well over 100 per day. 100+ PER DAY! ONE SET OF EYES! She often subjects new writers' stories to a bit more scrutiny than established authors who know the rules (which aren't easy to find). No, you're not blacklisted. Read the rejection notice; ask us here for help if you don't understand it.

Here are the basic rules IIRC:

* Decent orthography: spelling, grammar, punctuation.
* No description of anything sexual with anyone appearing to be an underage human.
* No snuff (killing for sexual pleasure) and Laurel doesn't find mayhem erotic.
* No bestiality with actual animals, only speaking fantasy critters.
* No non-consensual sex unless the victim derives pleasure.
* Someone else will have to give the celebrity / fanfic rules.

Laurel rejects many first stories for bad orthography. Use US punctuation and spelling, not UK. Look over your stories, see if fixes are possible, and re-submit. Good luck!

It's really easy to accidentally tap the "save draft" button instead of the "preview" button when submitting. That's probably what happened with the one that's in the draft folder. I've done it numerous times, but just happened to catch myself and correct it immediately afterward.

As to blacklisting, that doesn't happen. The worst that may happen if you break a rule is that your work might be scrutinized a little more closely until you demonstrate that you're regularly staying within bounds.

Even that is an outside chance, because it would require Laurel to remember your pen name out of the hundreds of stories she processes every week. You'd pretty much have to be a repeat offender for it to stick in her head. A one-off certainly isn't going to do it.

ETA:

As to celeb/fanfic specific rules:
No non-con.
No fanfic from franchises where the characters are underage in the original material. ( Pokemon, Harry Potter, etc. ) even if you write them as later in their lives when they're of age.
No politicians/elected officials.

I have also done this more than once.
Laurel does seem to look over new authors more closely, which makes sense. But just correct whatever caused your first story to be rejected, and resubmit. And like whoever else said, if you have questions about that the rejection notice means, bring it here for assistance. Just be willing to say what questions you got asked.

Note also that it's a generic set of questions for each rejection type. There's nothing tailored to the story being rejected - it's a catch-all process, not specific to your story.

I've only done it once but I've only submitted one story so I certainly believe it's easy as well. And that was after I nailed every bullet point other than putting Halloween contest in the noted. Luckily I caught all my mistakes within a couple hours.

I'm sure scoping out the forums and getting some friendly editing assistance helped. 😁
