That's pretty much the wiki on instinctual breathing here.

And then they don't breath; for a while. Until instinct kicks in.

While an instinct is an innate impulse toward action, it can be voluntarily ignored and over come for an indefinite period.

On the other hand autonomic functions can be voluntarily ignored and over come for a finite amount of time, but can't be for an indefinite period.

To determine if breathing is an instinct, you must have someone tie your arms behind your back, duct tape your mouth, put a clothes pin on your nose, then observe your actions...:)
