My Christmas dinner menu is just starting to take shape, but here are the basics:
  • Grilled butterflied leg of lamb
  • Grilled pork tenderloin tips (aka "those Costco pork roasts")
  • Grilled asparagus
  • Roasted red potatoes w/ shaved parmeggiano reggiano
  • Creamed spinach
  • Yorkshire pudding
  • Roasted beet and arugula salad w/ clementine oranges

I was also thinking of starting with a squash and chestnut soup, but that might be too difficult to coordinate.

The lamb and pork will both share the same marinade, which consists of cumin, kosher salt, pepper, cilantro, balsamic vinegar, olive oil, and the secret ingredient: anchovies.

So, what are you planning on serving for your holiday feast?

I think the entire family knows about the secret ingredient now, baby. The trick is to tell them after they devour the feast and make all manner of yummy noises. At that point, they're hooked. Sure, it's a wee bit devious, but that's half the fun.

Sounds like alot of work cooking all of those viddles, tortoise. It is a holiday. You should relax, open a few doodads, and generally kick back. Hope it all turns out well.
 
LOL, that's what my family keeps saying too, Pete, but I absolutely love to cook, so it's more like play than work to me.

Besides, this menu is actually much easier than my Thanksgiving menu was. The only real time consuming task is the creamed spinach, but I can prepare that even a couple days beforehand.

Edited to add: Hey Tortoise? In the same issue of Cook's Illustrated as the article on the knives (Nov/Dec 2002) is an article on Yorkshire Puddings.

If you can't get your hands on a copy, lemme know and I'll fax a copy of it over to you on Monday from work. I *really* don't feel like retyping it, but it has some nifty tips.

Yorkshire pudding is a necessity; you need it to soak up all the yummy lamby jus.

Grilled asparagus just rocks. I never prepare it any other way theses days.

I unfortunately missed out on what promised to be an excellent Hannukah feast last Thursday. Remember those weekly family style dinners I told you about (I met Marina Goldovskaya at the first one)? Anyway, last week's theme was something like... wait, I think I have the menu still:

Tortoise, do you grill yours with a little olive oil, balsamic vinegar, salt and pepper? That's how I like mine. Yum.
 
Exactly! After I pull them off the grill, I then sprinkle a few drops of meyer lemon olive oil over them. Smoky, slightly sweet, just a hint of lemon (more of an aroma than a taste). Yum!
 
Can I come to your house for dinner? You caught my interest with the menu but hooked me with the orgy. :D
