Tonight for dinner I made Carolina Barbecued Pork in the crock pot. The damned thing sat cooking from six this morning until about seven tonight. The meat basicly shredded itself as I put it on a plate.

After placing the platter of shredded meat, another plate of cut rolls, as well as several condiments on the coffee table we sat back to watch the remake of the movie "DFlight of the Pheonix". The movie was all right, although not as good as the original, and definately not as good as the original story I read years ago. However I found myself running out of rolls as well as room about halfway through the movie. It turns out that I managed to eat five of these sandwiches by the end of the movie. I'm so stuffed I can hardly move.

If anyone wants the recipe for a meal that will feed a whole lot of people let me know.

Sorry, I'm single now. And on a diet. Don't need recipes for big meals. Sounds yummy though.

LOLOLOL Okay, here it comes.

Caroline Barbecued Pork

2 Onions quartered
2 Tbs. Brown Sugar
1 Tbs. Paprika
2 Tsp. Salt
1/2 Tsp. Pepper
1 4-6 pound boneless Pork Butt or Shoulder Roast
3/4 cup Cider Vinegar
4 Tsp. Worcestershire Sauce
1 1/2 Tsp. Crushed Red Pepper flakes
1 1/2 Tsp. Sugar
1/2 Tsp. dry Mustard
1/2 Tsp. Garlic Salt
1/4 Tsp. Cayenne Pepper
Large rolls.

Place the Onions in the Crock Pot. Combine the Brown Sugar, Paprika, Salt, and Pepper then rub this mix over the Roast. Place roast in Crock Pot.

In a bowl combine the Vinegar, Worcestershire Sauce, Red Pepper Flakes, Sugar, Mustard, Garlic Salt, and Cayenne Pepper. Drizzle half of this mix over roast. Cover and refrigerate the remaining mix.

Cover and cook on low for 10 hours or on high for 6 hours. Remove the meat and onions, drain. Chop or shred the meat, chop the onions. Serve the meat and onions on rolls. Use the remaining Vinegar mix to drizzle over sandwiches.

Enjoy.
(Hint, my wife liked this a lot better when she put BBQ Sauce on her sandwich instead of the Vinegar mix. I like them both ways.)

Cook it in a crock pot with no liquid? Why didn't I think of that?!

Tonight I made ahuge roast. I seasoned it with garlic powder and a home mixed collection of onion powder, seasoning salt, salt free mrs.dash (orange lid). Then I chopped up a bunch of yams and steamed them. After they were steamed I mashed them up with some real butter, brown sugar, and a tiny bit of nutmeg. Then I made green beans and corn mixed together seasoned with garlic and butter. It was sooo good. I followed it up with a perfect cup of coffee. I am stuffed.
 
Tomorrow I will be making up a vast pot of meatballs and sausages in red sauce. Then we'll have crusty bread and all the freshly grated romano cheese I can make stay on top of the sandwiches.

I'd better shake out the spare bed. I'm making enough for about ten meals (so I can freeze and be lazy).

They'll usually let you through if you tell them you'll being using it to tame a horse.
