Quick cook, scotch oats, or steel cut?

I vote steel cut. That shit is awesome. Put it in a slow cooker overnight on low...ready to go in the morning. Yum.

Yummy, slice some banana over that and I am in heaven!
 
I've been making refrigerator oatmeal. Nice and quick in the mornings!
 
Baked Oatmeal

Ingredients
2 1/4 cups quick-cooking oats or 2 3/4 cups old fashioned oats, uncooked
2/3 cup firmly packed brown sugar
3/4 cup dried fruit
1/2 cup chopped nuts
1 teaspoon cinnamon
1/2 teaspoon salt
3 1/3 cups skim milk
4 egg whites, lightly beaten
1 teaspoon vegetable oil
1 teaspoon pure vanilla extract

Directions
Preheat oven to 350.
Spray an 8-inch glass baking dish with cooking spray.
In a large bowl combine oats, sugar, dried fruit, nuts, cinnamon and salt. Mix well.
In a medium bowl, combine milk, egg whites, oil and vanilla and mix well.
Add the wet ingredients to the dry ingredients and mix until well blended.
Pour into a baking dish. Bake at 350 for 55-60 minutes or until firm to the touch. Cool slightly. Serve topped with milk, yogurt, fruit or enjoy plain. Store leftover oatmeal tightly covered in the fridge.

You're welcome! It's oh so easy. I generally use vanilla or fruit flavored greek yogurt, otherwise I find it a little too tart. Sometimes I'll throw in a spoonful of maple syrup. Some eat it cold, but I can't stand the thought of cold oatmeal. I just pop the lid off, toss it in the microwave for 1 minute and I'm good to go. Hubby keeps laughing at me for eating breakfast out of a mason jar, but hey, it's handy! It beats the heck out of standing at the stove for 20 minutes waiting for it to cook. I'm all about lazy. ;) Plus, if you're in a rush you can just grab it and run.

Not that it has anything to do with diabetes.. or oatmeal..
but I'm trying this recipe. I want to see if it's something I can reheat at work.

Paleo-style omelet muffins

INGREDIENTS:
8 eggs
8 ounces cooked ham, crumbled
1 cup diced red bell pepper
1 cup diced onion
1/4 teaspoon salt
1/8 teaspoon ground black pepper
2 tablespoons water
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Grease 8 muffin cups or line with paper liners.
2. Beat eggs together in a large bowl. Mix ham, bell pepper, onion, salt, black pepper, and water into the beaten eggs. Pour egg mixture evenly into prepared muffin cups.
3. Bake in the preheated oven until muffins are set in the middle, 18 to 20 minutes.

I make mini quiches for hubby and son using a similar recipe, mine has a bit if milk. Mushroom, bacon and onion is good too. Just Sautee the onions and mushrooms to remove most of their moisture first. I use the paper muffin liners to make clean up and containment easier.

I freeze them and defrost in the microwave. Easy, fast and happy guys a the table.
 
Is that anything like Diabetes, might be curious to learn of a cure.

I cured my wifes diabetes with 1. mild exercise every day (walking), 2. remove every thing thats white from the menu, 3. and growing fresh veggies, especially things she enjoys, like spinach, okra, broccoli, tomatoes, etc. Shes been off her diabetes meds for a year.
