this is a serious question.... my mom is usually really good at making cakes, she does them semi-professionally (like wedding cakes and stuff), but for some reason she cant get a weight watchers cake recipe to work right. she's made it twice now and each time it falls out of the pan in crumbs... anyone else have a similar experience and possibly find a way to make it work out right?



and no, I dont know the recipe off hand.

Chances are, the reason this cake recipe isn't succeeding for her is that it may have very little oil. I would suggest that she try adapting the recipe a bit using techniques and ingredients she is familiar with that would provide binding (eggs and oil come to mind here) for the batter. A slight modification will not take the recipe too far beyond the calculated point value and might even make the cake quite a bit tastier.

I don't know how to bake a cake.... But I do know how to put a bun in the oven... will that help? :D
 
Use unsweetened applesauce to replace the oil in the recipe (this works for almost any baking recipe including cake mixes). It's probably crumbly because there's not enough moisture, and the applesauce helps that. You can also use egg whites instead of whole eggs, but a few eggs in a whole cake won't increase the fat that much.
 
Was she baking in the nude when she made it? I seem to remember stumbling on a buddies mom baking a cake in the buff when I was a younger man and I fell to pieces. ;)

I had a feeling there was a lack of moisture somewhere.... I'll tell her about the applesauce, that sounds like it might work to solve the problem.

This makes good cupcakes: 10 oz diet coke and 1 box of cake mix. Mix together without adding any additional ingredients. Without icing, they are 2 points each.

Also, search the WW website for the recipe for angel food and crushed pineapple cake. Yummy!

my advice... screw weight watchers... maybe not... but give me the recipe and ill help to solve it.

but what kind of a cake are we talking about???
