As far as I know: how far your fantasy goes. There are no rules against scat/watersports on this site.

Look in the Fetish section, that might help you determine how far you can go. As for the rules here...NO underage(18) sex or descriptions of underage sex, NO beastiality unless that beast is mythical or supernatural...like a werewolf.

I'm certain that as far as story goes, you can write what you like, but you simply can't post images of the same. I'm not entirely sure, but I know there is no law against written fantasy, and if that fantasy includes scat, I don't see the problem. I do not think that Lit has a rule against scat. If you're worried, then I'd suggest writing to Laurel asking for advice. She is pretty cool that way.

You may find your story gets bumped into the fetish category, and then you may get complaints that you didn't go far enough. I had that happen with Baby Changing Station.
