I fluctuate, but one of my first pies of every season has to be Granny Smith. I just pulled one from the oven. Last week, I made one with Fuji apples and it didn't have the correct ratio of tart to sweet.

Dayummm. Now I want a cherry pie. That is a July thing around here because that is when our cherries ripen up, but I am good with a cherry pie anytime.

Technically, it is an apple crumb pie. A crisp lacks a crust or crusts. It is just a mess of apples with crumble topping.
