Yeah let's talk about Potato Soup....


Potato Soup

1 tablespoon oil
1 medium onion, chopped
3 celery stalks, diced
3 large potatoes, diced
4 cups chicken or vegetable stock
1 bay leaf
Salt and pepper

Heat oil in a pot and saute onion until it is translucent. Add celery and saute for a couple more minutes. Add potatoes and saute, covered, for 5 minutes. Add the rest of the ingredients and cook until the potatoes are tender. Remove the bay leaf. Let cool for a few minutes, then puree. Reheat gently, but do not let it boil.
Serves 6

Not my original idea, twas Miss Emerald Eyes.......


Creme Brulee

4 egg yolks
3 tablespoons sugar
2 cups heavy cream
1 teaspoon vanilla
Fresh Fruit for topping (optional)

Beat egg yolks until slightly thickened. Gradually add sugar. Slowly pour in cream, stirring. Add vanilla, and pour into 4 custard cups or ramekins. Set them in a pan with 1 inch water and bake at 350š for 45 minutes to 1 hour. Cool in the water for 30 minutes and then chill completely before serving.
Serves 4

Angel, do you want to make some Light Strawberry Mousse?, yummy.

Light Strawberry Mousse

1 1/2 cups Water, boiling
2 3-oz. packages Sugar-free Strawberry Gelatin
2 cups Ice Cubes
3 cups fresh Strawberries; rinsed, hulled, and sliced
2 small containers Whipping Cream
16 fresh Strawberries, whole or sliced (for optional garnish)

In a blender or food processor, combine the boiling water and gelatin. Cover and process until the gelatin is dissolved. Blend in ice cubes until partially melted. Add the strawberries and blend well. Pour the mixture into a serving bowl.
Meanwhile, whip the cream in a separate mixing bowl. Fold the whipped cream into the strawberry-gelatin mixture. Chill the mousse for at least 2 hours prior to serving.

To serve, scoop the mouse into separate serving bowls and serve with two whole or sliced strawberries as a garnish, if desired.

I have lovely fruitcake recipes

Here's my favorite v-e-r-y lowfat Fruit cake recipe. This is a wonderful
sweet for the holidays. I've made this in tart tins, muffin tins, tiny
loaf pans and, as the recipe states, in a bread loaf pan (adjusting the
baking time to less if in very small pans). Making it in small loaf pans
makes a great gift; in tart pans helps with portion control and each piece
comes out a little sweeter. This recipe freezes beautifully.

VLF FRUIT CAKE
Recipe by Hanns_Schimdt
Serves 16

1/2 cup unsweetened apple sauce
3/4 cup water
1/2 cup sugar, rice syrup or substitute
2 1/2 cups mixed dried fruit, candied fruit, raisins, dates, figs, etc.
(use candied fruit sparingly), cut into very small pieces if
baking in smaller pans
2 TB blackstrap molasses
1 TB EnerG egg replacer, lightly beaten with 4 TB water
1 1/2 cup whole wheat flour
2 tsp baking powder
2 oz rum, brandy or whiskey (optional)
2 TB brown sugar for topping (I use raw sugar and use a bit more)

Preheat oven to 300 degrees F. Place the applesauce, water, sugar and dried
fruit in a saucepan. Bring to a boil and simmer for 20 minutes. Allow to
cool.

Mix the egg replacer into the fruit mixture, then sprinkle in the flour
and baking powder while mixing. Add water if necessary to make a stiff
batter. Pour into a non-stick 9" X 5" X 3" loaf pan or 8" X 8" baking
pan, sprinkle a little brown sugar on top and bake for 1 1/2 to 2 hours or
until a toothpick inserted into the center of the cake comes out clean (not
counting the sticky fruit).
