Hatch Green Chile Enchiladas!

Operation green chile enchiladas is well underway.

The green chile sauce has been made and is on the stove, ground beef is being browned, the corn tortillas are standing by as well as the baking dish.

The spanish rice turned out awesome too and is waiting. :)

I even scored some eggs so I can do the traditional fried egg over easy on top of the finished dish.

The refried beans are not of my own making though. I left that up to the fine people at Rosaritas.

Sooo, it will be green chile enchiladas with spanish rice and refried beans on the side.
 
drive east or west or south into New Mexico, stop at the first non-chain restaurant you find, ask "which is hotter today, red or green?" and then order the cooler. Order a side of sour cream and add as needed to cool the chili.

Once you develop a lust for a little hotter chili order your food "christmas" and it will come 1/2 red and 1/2 green. :heart::heart::heart::heart:

Now I know...a mere 5 hour drive away....
(thank you Shank, for the primer, but, yes....I do live in the southwest so know the "hotter" drill.) Just need to get me to New Mexico.... :)

This sounds very yummy. (except I prefer flour tortillas - the rest of my family prefers corn - ....but I know that my flour tortilla thing doesn't work on a gluten free diet.)

Are you going to share your technique?

This is actually my first attempt at the enchiladas so I'm following recipes.

The Hatch green chiles are so amazing that you can even order them on your burgers, pizza hut/dominos/papa johns all offer them on their pizzas.

Surely they should be readily available a 5 hour drive away, right?
Shank, the Kansas man, has totally got this Arizona woman jonesin' (sp?) for Hatch chilis. And Hatch borders AZ!

Uh oh. Sounds like the beginning of a lit get together around chile harvest time. :)

Ummm.yes....I don't think I've seen any inkling of a Lit get together East of the Mississippi. It must be time. Bring recipes (some gluten-free, for our host .) Oh yeah, we're all camping at your place 'cause we heard you serve good breakfasts :)

Anyway,

It was too late for enchiladas so now they are in a glass baking dish in the fridge and they will be tomorrow's dinner. :)
I have another day to look forward to them.
 
okay yall come to vegas.. YOU better let ADR and Myself know.. We are the locals around here these parts
 
Aha! Vegas local types in here. :)

I have just put the enchiladas in the oven to bake. I may have to make some more spanish rice by the time dinnertime rolls around.
