Hatch Green Chile Enchiladas!

For dinner tomorrow. I have almost all of the ingredients ready to go. :)

I know how much that Shankie loves the Hatch green chiles so I'll make it in dedication to him. :eek:

Hatch Green Chile Sauce

Source: The Border Cookbook by Cheryl Alters Jamison and Bill Jamison

3 tablespoon vegetable oil
1 large onion, chopped
3 cloves garlic, minced
2 tablespoons all-purpose flour
2 cups chopped roasted mild green chile, preferably
New Mexican or Anaheim, fresh or frozen
2 cups chicken stock
1 teaspoon salt
1 teaspoon ground coriander

in a heavy saucepan, warm the oil over medium heat. add the onion and saut? until well softened, about 5 minutes. Stir in the garlic and saut? for an additional minute, then add the flour and continue cooking for another 1 or 2 minutes. Mix in the chile. pour in the stock and add the seasonings. Bring the mixture to a boil. Reduce the heat to a low simmer and cook for about 15 minutes, until thickened but still very pourable.

Serve warm with enchiladas or other dishes. The sauce keeps, refrigerated, for about 5 days and freezes well.
 
Betticus, Des sent me this website. It's really cool. All you do is add the ingredient(s) you have on hand and it searchs recipes for you. The more ingredients you add to the search function, the better.

I will of course let you know how they turn out. I'm having to use frozen chiles for mine but I can perfect the recipe and maybe ship you some chiles when they harvest in the fall. :)

i had grown up on Anaheim's myself. and they are good.

But the Hatch. Ay, me muero! so delicious!

i am in Cali though.

We do not get the Hatch so much here.

drive east or west or south into New Mexico, stop at the first non-chain restaurant you find, ask "which is hotter today, red or green?" and then order the cooler. Order a side of sour cream and add as needed to cool the chili.

Once you develop a lust for a little hotter chili order your food "christmas" and it will come 1/2 red and 1/2 green. :heart::heart::heart::heart:

We do not get the Hatch so much here.

you can have frozen roasted green and well as red Hatch chili shipped to you - all you need is a source in NM. I know one who might respond to bribes of pics of cute butts in white cotton panties...:devil:

I discovered last night that they have hatch green chile on ebay.
