Grain Mills and Homemade Bread

Who has one and who makes it?

I love to make whole grain bread (so far only working with wheat, but looking to expand my repertoire) and recently purchased a grain mill.

I'd like to correspond with any of you who make your own breads and/or who use a grain mill at home.

Doesn't anyone use a grain mill, and/or make their own bread? I know I can't be the only one here who does that stuff.

why make bread? it comes in bags presliced and everything nowadays.
 
Homemade Bread!!

Hi BlueDaisy! :)

I make my own bread whenever i get time... I'm Jewish so a nice Challah (egg bread) is very yummy but a nice crusty white loaf is great too...

If you'd like to swap recipes, I'd be glad to PM or e-mail 'em to ya!

Don't have a grain mill -- where would you find one?

I've never made Challah before. Actually, the only ones I've made have been white, and wheat. I want to broaden my bread horizons.

Lots of places online. I'll PM you the name of the place where I bought mine.
 
Not me, BD. Baking and I don't get along at all!

I know there are a lot of baking forums out there. Off the top of my head, I'd check out the forums at recipezaar. The folk over there ROCK!
 
I don’t own a grain mill, but I do make my own bread. Not everyday, but at least a couple times a month. I cheat by using a bread machine, except at the holidays.

I used to use a bread machine, but we prefer the bread made by hand. I cheat and use a Bosch mixer to mix and knead the dough; I have carpal tunnel syndrome pretty bad in both hands, so I can't do it by hand.

Have any recipes you'd like to share? I'm particularly looking for a chewy whole grain bread that has some of the crunchies in it (the grains, seeds, etc).

I use the mix cycle on the machine often, which might help you as well. I have a good sourdough recipe. (I will have to pm it to you as I have to type it all in first) As for the crunchy grain bread, well I substitute course grain flour and it turns out nice.

And if you use a little to roll the finished dough in before you put in the backing pan, it adds a little something to it. I have been very lucky that one of the local grocery stores has a large selection of grain flours.

Oh....I don't like sourdough...hope I caught you before you typed it! LOL!

I'll try the course flour added to the regular. I think one way might be to parboil the cracked grains then add it. Also, sprouted grains should work.

There are 2 natural foods stores here (well, one is a chain and has 3 or 4 locations) that have a wide variety of flours, but I wanted to make it fresh.
 
Sorry about that, I typed before I thought. I have never used a grain mill & did not know if they came with different settings. I know some coffee grinders do & was going with that assumption. I haven’t sent the sourdough recipe yet, but let me know if you ever want it.

No problem.

My mill (Nutrimill) has different fineness settings, but not all do.
