Well I have finally reached Gastronomical Heaven.

I picked up a nice half Beef Brisket. We're talking a half Brisket with the fat still on it. (Called a Flat Cut.)

Last night I hit it with a nice rub made from Garlic, Onion and Chipotle Pepper.

This afternoon about 1400 I fired up the Smoker and set the Brisket on the top rack. I slow cooked this sucker with heavy smoke for six hours. (The last half hour I turned up the heat a bit.) When it had sat for a couple of minutes I thin cut it.

Bisquites and a bit of BBQ Sauce, (Sweet Baby Rays Original) and dinner was Nirvana.
