to sample before the chocolate cake Calypso is making...


Hot Artichoke & Spinach Dip


1 8oz. package cream cheese
1 can 14 oz. Artichoke hearts, drained, coarsely chopped
1/2 cup spinach (frozen, chopped, or steamed)
1/4 cup mayonnaise (DO NOT use miracle whip)
1/4 cup parmesan cheese
1/4 cup romano cheese (you can use all parmesan)
1 clove garlic, finely chopped...more if you like garlic
1/2 tsp. dry basil
1/4 cup mozarella cheese, grated
1/4 tsp. garlic salt
salt and pepper to taste

Allow cream cheese to come to room temperature, cream together mayonnaise, parmesan, romano cheese, garlic, basil, and garlic salt. Mix well. Add the artichoke hearts and spinach (careful to drain spinach well) and mix until blended. Spray pie pan with "Pam" spray. Pour in and top with mozarella cheese. Bake at 350 degrees for 25 minutes or until top is browned. Serve with crackers and cut up veggies.

I've made it several times. Most recently at christmas last year. I love it too much, so I don't make it very often. ;)
 
DO NOT use Miracle whip

Dont push me PacificBlue.

I just ate a half hour ago but between your avatar and the recipe I'm hungry again.

Never buy Miracle Whip even though it was the weapon of choice in my home growing up.

Whoops! sorry... ;) ok, not really. *grin*

I don't think I've ever eaten miracle whip. I have no idea what it tastes like...I'm more a mustard girl with sandwhiches.

*Bottle on wine, hot artichoke & spinach dip, fresh veggies, fruit, good conversation* mmmmmmmm... *dreaming*

Suggestions:

Use Hellmans mayo, it doesn't separate during baking.

Addition of diced red bell pepper makes a colorful addition.

Worchestershire to taste adds debth, as does your favorite hot sauce! :devil:

Hollow out an appropriate sized bread round for the presentation.

Great suggestions! Thank you, I'll have to try those next time I make this...which won't be for awhile. It isn't exactly Weight Watcher's friendly fare.
