finding 5 i will have to think about, but Barber's Adagio for strings in Platoon is still one of the sadest pieces of music I can think of.

Next would be the old favourite of Wagner's Ride Of The Valkyrie in Apocolyps Now.

What? No one mentioned Vivaldi's Four Seasons in the Alan Alda movie of the same name?

I think in all those, the music was more than just background, mood setting stuff, it was like another character.
 
the movie "Philadelphia", the music "Mamma Morta" sung by Maria Callas. Tom Hank's character listens to this as he takes his treatment and he explains to Denzel Washington's character the story behind the song. How the woman is singing of her impending death and her forgiveness to all who have wronged her in her life. *sigh
