Hi all! I got the crazy notion in my head today to make a ginger, leek, chicken soup. I bought the ginger root and used it (very delicious!) but I still have alot leftover. I was thinking about something I saw somewhere (I really don't remember where) about using ginger for genital torture. Anyone have any ideas or experiences with this....or good ginger recipes. Either way I'd like the root to get used and not rot in the fridge. Thanks!
 
You should make super crazy ultra healthy cure everything hippy juice. I used to work in an organic veggie restaurant and we had it all the time. You juice some ginger, some carrots, an apple and throw in cayenne pepper. It's crazy, it works super good if you're sick, but it's pretty good for allergies and crap too. And it's pretty yummy, but I have kind of strange taste so you may not agree.

I do something similar with tomato juice when I'm sick: 1cup tomato juice, 1 tbsp (or more, I like hot) tobasco sauce, 1/8 tsp cayenne pepper and black pepper. OMG, if you don't like spicy don't let it hit your tongue cause it BURNS! but I like it.
actually, with the exception of a devise to juice the ingredients I've got all those things on hand now...

blender? even though I think that could potentially be absolutely horrific.
 
Would it be wrong to fig subbie with ginger and call him gazpacho?

Ginger...ohhhhhh...I LOVE the stuff!...I've put it in several things actually....I grate it (fine) and add it to my favorite cookie recipes for a yummy kick.

I know this might be obvoius but it makes some kick ass ginger bread if you bake. Carrot bread is good with it too. So is carrot cake (try a spike to the icing...tasty!).

You can brew it for a zesty type of throat soothing tea. I had a small tea pot with the built in strainer for loose leaves and just put chopped ginger in it and added honey like I would with tea. Stopped a bad cough I had dead in its tracks.

Don't know much about the gen torture though :rolleyes:
Sorry...I only eat it....hmmm...careful Gracie....that may apply to gen torture too!

Tom Kah Gai (Thai coconut, lemongrass, ginger soup)

12 oz can of Coconut milk
4 slices of Ginger - about poker chip thickness **
1 lime, juice and grated peel then cut in chunks
Chili Peppers - Seranos or the little red Thai peppers are generally available in the produce section **
1 stick of lemongrass -- about 4" long, cigarillo thickness
1/4 lb Chicken breast
Cilantro **


- Pour the lime juice on the chicken and let it sit while you ready the other ingredients.

- Pour the coconut milk in a saucepan, add Ginger, Lemongrass, Chiles and lime peel and bring to a simmer.

- Add Chicken and cook just below boiling point for about 10-15 minutes --- until chicken is fully cooked.

- Remove from heat, stir in Cilantro and serve --- can also be eaten over rice.


Anything marked ** means add to suit your taste. Some people like more or less spice. You can add mushrooms, fish oil, I've seen it with tomatoes in it and even a little green onion, but that's all just personalized stuff. It's a pretty basic soup that you can futz with.

My homemade variation:

2 cups water
Juice of 1 lemon
2 tablespoons shredded fresh ginger
4 cruched cloves of garlic
1 tablespoon honey
2 teaspoons cayenne pepper

MIx ingrediants and bring to boil. Let sit for 5-10 minutes, pour through strainer and drink. Guarunteed to clear your chest, sinuses and helps fight the flu and colds. Take it 3 times a day until better, usually 2-3 days.

By the way, it tastes really good.

Sounds like it tastes better than theraflu!
 
Not too many recipes here.....looks like subbie gets a ginger figging! Aren't there any more helpful people out there who would help out my poor little subbie by posting recipes? He's sick right now so I'll try the remedies, but if there is still ginger when he feels better he gets a new experience...

hmmm....don't know what a figging is but for some strange reason...I feel the odd urge to prevent it...LOL.....Here's some recipes (hope you're not on a diet)

Soy Chicken - This can also be done with cutlets
Ingredients:
2 lbs of chicken wings
1 cup soy sauce
2 cups brown sugar
1 tablespoon garlic powder
1 tablespoon ginger minced fine
salt (optional)

Instructions:

Wash chicken and dry as much as possible.
Preheat oven at 400 degrees.
Place chicken in a deep baking dish.
Mix all other ingredients together in a bowl.
Pour over chicken
Place in oven for 1 1/2 hours or until chicken is done and sauce is sticky.

Comments: Due to the hot cooked sugar, chicken will be extra hot and easy to burn.
Be careful and let chicken sit for at least 20 min before serving.


TIGER SHRIMP IN SPICY SAUCE:
2 tablespoons vegetable oil
1/2 stick butter
1 garlic clove, finely minced
1/4 teaspoon ginger root, finely minced
1/2 teaspoon chili paste
2 pounds jumbo shrimp, cleaned and deveined
juice of 2 limes
lettuce greens
1. Heat oil and butter in a skillet until hot. Sauté the garlic, ginger, chili paste and shrimp until shrimp starts to turn pink about 5 minutes.
2. Add the lime juice. Serve over a bed of lettuce greens.


Carrot Cake
2 cups sugar (It's also good with 3 parts white to 1 part dark brown)
4 eggs
1 1/3 cups cooking oil
2 cups flour
2 teaspoons baking soda
2 teaspoons baking powder
2 teaspoons minced ginger (but add as much or little to taste, I have a heavy hand with it)
2 teaspoons cinnamon
4 cups grated carrots
3/4 cup chopped nuts

Beat sugar and eggs together. Stir in the oil. Sift together the flour, baking soda, baking powder, and cinnamon. Stir the sifted ingredients into the egg mixture. Fold in the carrots and nuts and ginger. Pour into a 13 X 9 pan and bake in a preheated 350° oven for 35 to 40 minutes, or until done in the center. Cool completely before frosting and/or eating.

Cream Cheese Frosting
1 (8-ounce) package cream cheese, room temperature
1/4-pound butter
1 (16-ounce) package confectioner’s sugar
1 teaspoon vanilla
Cream together all ingredients and frost your cake. Note: Do not be tempted to add any more liquid. Doing so will ruin the texture of the frosting.

By the way the carrot cake is a bit rich...My family comes from South Carolina....where we think butter is a beverage.

Thai Sea Bass
3 lbs. sea bass
Thai Sauce Recipe:
Zest and juice of 3 limes
3 tablespoons fresh ginger, grated
1/2 cup soy sauce
3 tablespoons vegetable oil
4 cloves garlic, minced
1/2 teaspoon red pepper flakes
Prepare the Thai Sauce recipe by combining all the sauce ingredients in a medium bowl. Coat the fish pieces well with the sauce and grill over medium heat for about 10 minutes each side, or until the fish is opaque and flakes easily with a fork. Baste often. Serve the remaining sauce on the side, if desired. Serves 10-12.
 
I use ginger for my stir fry, and once I stop being lazy, my homemade pot stickers.
 
After all these recipes I am quite hungry. And looking at them I would feel the use of the ginger for anything BUT cooking/baking quite a waste ;)
Tealsphynx, would you share the recipe for the ginger-leek-chicken soup? Sounds delicious!
 
Here's a recipe for Candied Ginger

1 cup fresh ginger
3 cups water
3 cups sugar

- Peel ginger and slice into rounds about 1/8 inch thick.

- Mix sugar and water in a large sauce pan and bring to boil.

- When sugar is disolved, add ginger and boil for 45 minutes. Ginger should be sweet and tender.

- Drain ginger and reserve liquid.

- Place ginger on rack to dry for 30 minutes.

- Toss with sugar to coat. Let dry on wax paper. Store in airtight container.

- Boil reserved liquid until reduced to a syrup with consistency between maple syrup and honey. (mine was that way after the 45 minutes with the ginger in it.
Sugar will crystalize, but just and a little water and boil. Store in airtight container in refrigerator. Syrup can be used for waffles, icecream, tea, Or whereever you use syrup.
