Per neci request, a thread devoted to Thanksgiving eats, recipes, chatter, family horror stories, yada yada yada. Plus, a poll (pole) asking about your Thanksgiving dinner.

For G, I will be posting some of my menus and recipes from my themed Thanksgivings (there have been many).

As you can see from my choices, I am not a fan of the green bean casserole, perhaps because I've never had a good one. Up here in the great land, beans in winter were all canned when I was growing up. Much more palatable than canned peas, but still "blah".

I see no reason to not have roasted Brussels sprouts AND roasted potatoes.

Sweet potatoes are in the same category as beans, above.

Otherwise, I'm pretty much an omnivore.

Here, lingonberries are wild and called lowbush cranberries. They are superior to the Ocean Spray cranberries sold in the fresh fruit and veggie dept at the grocery, IMO. However, the store-bought berries can be used for making cranberry sauce if you have no access to lingonberries.

Proportions are 4 cups berries, 3 cups sugar and 2 cups water. Cook it until the berries pop in a pot on the stovetop and form a sauce. Non-purists can add shit to the sauce, like orange zest, etc. If you make it, try it before you add anything else. For me, the taste is like sitting down to dinner at Grandma's house.

Ok, I am posting this one for G, solely for amusement. Every year, I make a themed Thanksgiving exploring regional American cooking, or sometimes food from abroad. One of my favorites was the Southwest American, closely followed by my Northwest themed Thanksgiving. One year I went balls out crazy and opted for a Thai theme. It was a disaster of epic proportion. The pumpkin sticky rice didn't set up correctly and the caramel mango tart was way too sweet. The lemongrass-ginger basting butter tasted like perfume. The stuffing I made with Thai sausage was way more spicy than anyone wanted. And wtf was I thinking, making gravy with coconut milk? Bad, bad, bad idea. Long story short: do not ever, ever put Thai chilies in mashed potatoes. The only thing that was good was the first course, a tom yum butternut squash soup.

Be careful what you pick as a theme, people.

How do you make a favorite comfort food a little healthier? Without losing texture and flavor, all you have to do is switch from using ground beef to a good quality ground turkey, of course! That said, you will need to spice the turkey balls up with add-ins or cooking them in a flavored sauce. Update to this recipe: A wonderful pairing of flavor is to add White Horseradish and Sweet Pepper Relish. Yum. Note: I use Gluten-free Horseradish.

To cook a very simple, tasty version of turkey balls, I prepared fresh ground turkey with ingredients as if preparing a meatloaf. Everyone has their own version of meatloaf, but I find using Panko Bread Crumbs to be an ingredient giving a meat or turkey mixture some body so the compacted meat does not become too dense. By baking the seasoned ground turkey balls, one saves some calories by avoiding a frying process for cooking.

These baked ground turkey balls can be served as an appetizer with a favorite dipping sauce or served as a main dish along side of a healthy carb and a side salad. Either way, these tiny balls of comfort are satisfying to the palate and are fun to eat.

What you will need:
Lage mixing bowl
Small mixing bowl
Fork or Whisk
Wooden spoon
Lage baking sheet
Parchment paper
Spatula or cooking tongs
Pot holders
Large serving platter or large serving bowl

Ingredients:
Fresh ground turkey, one pound
One whole egg OR Two eggwhites
Ketchup, 1/4 cup
Worcestshire Sauce, 1/4 cup
Kosher salt, one teaspoon
Black pepper, one teaspoon, crushed
Smoked Paprika, one teaspoon
Panko Bread Crumbs, 3/4 cups or more for consistancy to form balls
Optional: add an herb of choice or vegetable such as chopped, fresh spinach or chopped fresh kale.
Update to recipe:
Horseradish, white, 1/4 cup (or more for personal taste.)
Sweet Pepper Relish, 1/4 cup (or more for personal taste.)

The Cooking Process:
Preheat oven to 350 degrees F. Cook turkey balls for about 20-30 minutes until they are slightly browned. Do not overcook or they will be too dry.

With the fresh ground turkey in a large bowl, add a well-mixed egg (or only eggwhites) from the small bowl that has been mixed with the fork or whisk.
To the turkey egg mixture in the large bowl, add the remaining ingredients and mix with the wooden spoon to a consistancy to form a small ball with clean hands.
Continue to form balls of mixture and put them on a lined baking sheet with parchment paper.
Put the baking sheet into the preheated oven to bake.
Check often to make sure the turkey balls are not browning too much.
When the turkey balls look browned on the top, shut the oven off and remove the baking sheet from the oven.
Remove the turkey balls on to a clean platter.

One year, I decided to make a green bean casserole from scratch. I made a mournay sauce and mixed it with wild mushrooms. I blanched the beans. I made homemade fried onions. It was a lot of effort.

And after all of that work, I still liked the canned version better. Don't fuck with tradition.

I serve at least two kinds of potatoes at my dinner, and always roasted Brussels sprouts.

Yay! A recipe for lingonberry preserves! Love those.
 
Deep fried turkey nuts are soooo good! Served with fresh salsa. Not really a Thanskgiving thing yet still yummy.

I'm skipping the turkey and going to Mexico for 17 days this year.

I'm practicing making pie. My previous thanksgiving pie supplier has left her husband and got the hell outta dodge all of the sudden a few months ago. So I took over thanksgiving pie baking. Which may have been a mistake.

This is my latest apple pie. It is one ugly-ass freaking pie. But I'm improving!

I'm practicing making pie. My previous thanksgiving pie supplier has left her husband and got the hell outta dodge all of the sudden a few months ago. So I took over thanksgiving pie baking. Which may have been a mistake.
