Perhaps something near and dear to his heart - a well loved hobby or past time?

My SO is a lifelong fisherman, and loves his boat almost as much as his children.

I call him the Captain. And needless to say, he enjoys the sound of it, more than a little.

Makes me think of "O Captain, my Captain!".
I have used it myself with someone who was teaching me to sail. Started out as a joke but somehow it stuck.

I finally decided to go with Fuckin' Bastard for my dom-ly name, since that seems to roll off the tongue so very easily for just about anyone who talks to me.

On a more serious note, I'd say just go with whatever seems to come up naturally. In general I think terms like Dom or Sir or Master are intended to convey respect, but let's face it: respect has a lot more to do with how you say something as opposed to what you actually say. If you're comfortable with his first name I'd say start there and just see where things go from there. I think you will find something you both like without too much trouble.
