A favorite casserole that freezes well? I usually make two or three casseroles on the weekends and freeze in single serving sizes to heat and eat during the week for lunch and dinner. I really don't like sandwiches for the most part. Currently my repertoire is quite small and although I love tuna noodle casserole...5 nights a week? Ick! I know this is a porn board but you all eat sometime, so help me out and post your favorite with directions on how to make it.
 
Chili isn't a casserole, but it freezes very well. So does lasagna.

I can't help you with the recipes, because my mom makes it and then gives me the extra so I can freeze it.
 
Not really casseroles, but I make spaghetti sauce, taco/burrito meat, cooked seasoned chicken, etc. in large quantities and freeze them in portions. That way, I can just boil up some noodles, or get out the tortillas, or toss a salad and i have a meal.

For casseroles... I love chicken enchilada casserole, if you want the recipe, let me know. I make amazing meatloaf that freezes well. Even people who hate meatloaf, love mine. Anytime I boil a chicken, I save the broth and freeze it in small portions to use later when making rice or pasta that I want to have some flavor. Much cheaper than using the canned variety, no salt, and (at least in my case) I know exactly what's in it, since they're my chickens.
