A point to consider here: An undercover officer generaly would NOT carry a police issue weapon. Carrying a weapon that has "police issue only" features, or, worse yet has police issue markings on it tends to give rise to suspicions about connections to the police that are hazardous to an undercover officer's health.

Personally, I'd arm an undercover officer with a Browning 9mm because they're fairly common, fairly reliable, and are based on the B1911a1 Colt 45 design so the design is relatively familiar to anyone who has ever watched a war movie.

Most firearms are not marked "POLICE ISSUE"

They are simply purchaced in bulk by the department, or by the officers with a department stipend or required to purchace off their own list.

Any firearm 9mm and above from Glock, Sig Saur, H&K, Beretta, S&W, Colt, Kimber, Springfield Armory or Ruger will fit the bill.

Oh, and Glock's don't have 9mm's with a 9 round magazine. Their are only 3 glocks with a 9 round magazine:

Glock 27 - Subcompact .40S&W
&
Glock 30 - Compact .45 ACP using a flush fit magazine. Standard mags are 10 round.
&
one of the new guns in .45GAP, either the Glock 37 or Glock 38.

All Glocks, and for that matter, all handguns that a police officer would carry are available on the civilian market unless you are talking exotic stuff like the Beretta 93R which is manufactured with a 3-round burst capibility (1 trigger pull - 3 rounds go off) or the Glock 18 (Full auto machine pistol)

Those are, of course, availabel to people on the civilian side if they have BATFE approval.

Short answer...Cops carry anything that isn't junk.

In the 1980's as a uniformed patrol officer I carried a Model 686 S&W, 4 inch stainless steel in .357 Magnum. A quite muzzle heavy weapon it was a six shot double action revolver. I also had a Model 60 "Chief's Special" 5 shot .38 special I wore in an ankle holster as a back up weapon and occasionally as an off-duty or plain clothes weapon. We had 12 gauge Mossberg pump shotguns. Pump shotguns are still very common, because there is no sound as unmistakeable as the action being racked to chamber a round. I once cleared an entire parking lot just by doing that (thank goodness, since my backup was still five minutes away).

My husband, who is presently a sheriffs deputy (in the South, where I also was in law enforcement) carries a .40 cal S&W double action automatic. I'm sorry, I've forgotten the model number. His car also has a Remington shotgun, 12 gauge and once again a pump action weapon.

By the way, the holster and other gear is important too. I first used a "fast draw" type holster with a backwards cant until one night an officer using a similar holster lost his sidearm during a domestic struggle. I immediately switched to a Bianchi security holster that would not aloow the gun to be snatched from the rear or side.
