Spent most of today cooking for work tomorrow. Several of the other Nurses have decided they want a special lunch tomorrow for some reason and I was asked if I could make the chicken. I agreed as long as they paid for the chicken.

I was given 10 pounds of Drumsticks and asked to smoke half of it and I could keep the other half as payment. Okay I could deal with that.

Last night I prepared the chicken for today. Into the food processor(sp) was dropped an onion, several cloves of garlic, a little Soy Sauce, a full bulbs worth of Roast Garlic and of course a couple of Ancho Chili's. This was run until it was a nice smooth paste. This was then spread onto the chicken, both on top of and under the skin before the chicken was covered then placed in the fridge overnight.

This afternoon I fired up the smoker and tenderly placed the chicken in it with plenty of Hickory Chips. Talk about a nice slow smokeing going on.

Several hours later they were done. A nice golden brown and cooked through they were moved inside and placed in the fridge to wait until tomorrow morning when they will be brought into work.

And no dinner for me wasn't Chicken. Instead it was a treat. WeisseWurst grilled then reheated in Kraut made with Fennel Seeds and served with a side of hot Potatoe Salad. (Complete with both the vinegar and Onions.)
