Cookie recipes?

I have somewhat unwisely entangled myself in a bizarre but cheerful holiday ritual that requires the presence of cookies. I have no particularly festive recipe for cookies; in fact I've never really gone much farther than the instructions on the back of the chocolate chip package.

Would anyone like to share recipes for cookies, Christmas or otherwise? Lord knows I need all of the help I can get. Besides, it would be a wonderfully cheering inside joke to produce these cookies in unsuspecting company and smile gently to myself, thinking of where I got the recipes.

Carson's Mom's Sugar Cookies.

Cream together:
1 cup softened butter
1 1/2 cup sifted powdered sugar
1 egg
1 tsp real vanilla
1/2 tsp almond extract

Slowly add:
2 1/2 cups sifted flour
1 tsp cream of tartar
1 tsp baking soda

Refrigerate dough 2-3 hours.
Preheat oven to 375.
Roll out 1/4 inch thick. Cut out with great cookie cutters. Place on shiny cookie sheets, decorate with seasonal decor.
Bake 7-8 minutes. Only the edges will be lightly brown.

Best if decorated by kids. (Caution: they will decorate one batch and lose interest, returning when the cookies are done.)

We always fought over Rudolph.

4 1/2 c Water
1 c Sugar
1 cn Frozen lemonade
1 cn Frozen orange juice
1/2 pt Apricot brandy
Bring water to boil, stir in sugar and return to boil. Set off burner and wait until it quits steaming. Add juices and brandy and freeze. Form into balls with melon baller and return to freezer. Remove from freezer immediately prior to serving.
 
Old-Fashioned Ginger Snaps

3/4 cup butter (has to be butter, no margarine)
1 cup sugar
4 tbl. molasses
1 egg
2 cups flour
2 tsp. baking soda
1 tsp. cinnamon
1 tsp. cloves, ground
1 tsp. ground ginger
extra sugar

Cream butter and sugar together. Add egg and molasses, and beat well.

Sift all dry ingredients together, and add to creamed mix. Chill for at least 2 hours (I usually let it stay in the fridge overnight).

Roll dough into small balls (3/4 inch to 1 inch), and roll in extra sugar. Place on greased cookie sheet approximately 2 inches apart, and bake 11-12 minutes at 350 degrees.

You have to keep a very close eye on these as they get close to 9 minutes or so, because they thin out a good bit while they cook, and they'll go from being the perfect texture to too crisp pretty quickly.

Best cookies I've ever had.

Stained Glass Cookies

I saw this Emeril make these the other day on tv and had to grab the recipe. It's an easy rating so I'm going to give it a shot. I thought I'd pass it on since we're exchanging recipes.

1 cup sugar
2 sticks butter
2 eggs
1 teaspoon pure vanilla extract
3 cups all-purpose flour
Assorted brightly colored, hard candies
1 (2 to 3-inch) star cookie cutter

Special Equipment: 1 small triangle cookie cutter

Preheat oven to 350 degrees F.

In a mixer with a paddle attachment, cream the sugar and butter until smooth. Add the egg and the vanilla extract. Mix in the flour. Remove the dough from the mixer and press into a rectangular shape. Wrap in plastic wrap and refrigerate for at least 1 hour.

Remove from the refrigerator and cut dough into 1/3. Roll out dough, 1 piece at a time to a 3/16-inch thickness. Cut out as many large stars as possible. Repeat with all of the dough. Cut a small triangle out of each the arms on each star.

Place the hard candy, by color, into small plastic bags. Place a towel over the bags and crush the candy with a meat mallet. Place all of the cookies on parchment lined sheet pans. In each of the
triangle holes, fill with different colors of crushed hard candy. Bake in the oven for 10 to 15 minutes or until lightly golden brown, and the candy has melted.

it's got an easy to use search engine and user ratings and blurby bits which are really useful. I've found some cracking recipes here. The only problem is there are so many you might get lost in there forever *L*

anyway this is a lovely plain biscuit (cookie) recipe which you could decorate with icing and sweets if you wanted :) I found it on allrecipes and have used it myself with great success.

Apparently it's the original girl scout cookie recipe if that is enlightening to anyone*L*

1 cup butter, softened
1 cup white sugar
2 eggs
2 tablespoons milk
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1/4 cup crystal sugar


DIRECTIONS:
mix together the cream, butter, and sugar. Next, add well-beaten eggs, then milk, vanilla flavouring, flour and baking powder.
Roll thin (just barely a 1/4 inch thick should do), then use whatever shaped cutter to cut out your cookie shape then sprinkle sugar crystals on top, and bake at 350 degrees F for about 8 minutes,or until just truning golden but not brown!

if you wanted to add icing or whatever just don't sprinkle on the sugar at the end....cook them then ice them when they're cool.

I do appreciate that, and have been surfing some online recipe sites - just wanted to see if I could gather something with a bit more personal touch or tradition to it. I very much appreciate the contributions.

It's a work thing. We're meant to each bring cookies, then do an "exchange" where we all take some from each and end up with a big mix of holiday cookies. I actually very much like the people I work with, so I am willing to give it a try.

Sounds cool to me :) Sorry i haven't got any family cookie recipies. Now I can give you a damn good recipe for never fail sponge buns (cakes) but well thats not what you asked for*L*

It's true that I did not ask for sponge cake, but I would love to try this recipe. Despite being, if one may say with humility, a fairly good cook, I am quite possibly the worst pastry chef in existence. I would enjoy making a "never fail" recipe in the same way that I would enjoy firing an unstoppable missile at an immovable object ;)

(BTW I have a food scale, so I can handle a recipe in grams or ounces).

That sounds neat, we used to have a party at work too, with a grab bag and all.
I was going to say, presentation is always good too, with a mix of cookies and candy, if the cookies suck, at least it looks lovely...LOL

Ok well you asked for it *grins* so here it is :D


8oz self raising flour (or 8oz plain flour and a teaspoon of baking powder)

a pinch of salt

4oz butter or margarine

4oz caster sugar

2 large eggs

1/2 tsp of vanilla extract/essence


So preheat your oven to gas mark 8 and put some little bun cases in a bun tray (or this makes enough to do two 7" circular victoria sponge tins. sandwich them together with cream and jam for a yummy birthday type cake)

now put all the ingredients in a bowl and whisk with an electric hand whisk (or a hand one if you feel muscly enough) till the mixture goes lighter in colour and texture. it will be fairly runny(dropping consistancy) so don't worry.

now drop a tablespoon or so into each bun case (fill till about 2/3 full really) and put on the top shelf of your oven for 15-20 mins. check after 10 mins to judge how much longer it will take to get them to golden brown :)

thats it :) add icing or buttercream on top for extra sweetness but these are yummy just plain and heavenly just warm out of the oven.

this makes approx 12 buns :)
