Yep, chow time at Casa Gato.
My wife decided this morning she wanted fish tonight. When we went shopping I checked out what they had at the grocery store and picked up some nice Tilapia Fillets.
Tonight when I was getting things ready to make dinner I slipped a little extra into the Breadcrumbs. A little "Slap ya Momma" Cajun Seasoning a freind of mine brought back from New Orleans for me. (I kid you not that's it's name.)
Dip the fish in a bit of beaten egg then into the breadcrumbs. Do it again then toss it into the fry pan with a little hot Olive Oil.
Serve it up after the bread crumbs are nice and golden. Serve it up with some Snap Beans and Sourdough Bread toasted and slathered with sweet cream butter.
