I love a good med. or sharp cheddar. Provolone would have to be my second favorite.

I don't think I could pick a favorite, there are so many I love. Smoked Gouda....Dill Havarti.....Boursin......fresh Mozzarella....

depends on what it's going with, of course.

a nice stilton can't be beat (i've heard the unpasturized is spectacular, but illegal, e.u. regs--damned brussels!). canadian black diamond cheddar is good. a little whensleydale on jacobs cream biscuits for a light snack. i'm addicted to cow-pals string cheese (don't ask). brie.

did anyone ever read a book called Fermentation by Angelica J.? It's somewhat erotic, masochistic, and has different kinds of cheese as motifs for each chapter.

I just got some Havarti with caraway. love almost any cheese with caraway in it....
