Brisket Recipe

This board helped me a lot when I needed a chili recipe so what about corned beef brisket.

I purchased a small brisket, point cut. I've been told I should have gotten a flat cut but I didn't know since I have never cooked brisket nor have I ever eaten brisket.

Ideas anyone?

I suggest trying a sausage gravy with your biscuits. Goes good with a bowl of grits, but you are from the north, so I suggest sugar on the grits. Maybe fry an egg or have some spicy sausage. Jimmy Dean is the best...

I know I can look in a book but I want one that somebody has actually used.

Tony, it is essentially the same as a boiled dinner. You have to boil it until tender; I usually throw a bay leaf, salt and whole peppercorns in with it. You have to skim the water, though; the scummy stuff that rises makes it taste awful.

I assume this is for corned beef and cabbage?

It could be but is that all it is meant to be used for? I have used ham butts for 'ham and cabbage' but the store had a good sale on the brisket's (.97lb).

Biscuits go really well with ham, or honey and butter too.
 
No, but a corned beef brisket is pretty much a boiled meat.

You don't need to do the cabbage if you don't want to. I only asked, but St. Patrick's Day is next Saturday, and corned beef and cabbage is being served in every bar in the land. I try to avoid them, because beer should not be green. It's unnatural.

Anyway, I did a search at the Food Network site for corned beef. Here's the link, if you want to look at these:

Chilli Corned Beef...

Pour a little extra virgin olive oil into a large pan or oven proof dish.

Saute onions and garlic till they are translucent.

Dice corn beef into small cubes.

Add chilli powder(*to taste), fresh ground pepper (*tt), cayenne pepper (*tt), Paprika (*tt), to the onions and garlic stir quickly to cover them with the spices.

Put the corn beef into the pan and keep it stiring till it is warming through with the onions and garlic and has started to take on the color of the spices.

Add 1 can of Tomatoes, 1 can of peas, 1 can of sweet corn, 1 can of pinto or refryed beans stir.

Add a couple of cans of water and any herbs that you have to hand.

Stir in a couple of spoons of mustard (*tt).

Stir well lower heat to a simmer, put the lid on the pot and simmer for 45 mins to 1 hour.

While it is simmering go and buy a fresh crusty loaf of bread and real butter to eat with the chilli beef.

All the cooking is done in the one pot so there is less washing up, this should serve 6 - 8 portions.

If there is something in the ingredients you dont like put a different can of veg in that you do like.
