Break out the Deep Fryer

One of my neighbors, Carmen gifted me with a bag filled with Anaheim Chili's. Oh so very nice.

These suckers were nice big ones as well.

The first thing I did when I got them inside was fire up the oven. I knew what I was making for dinner.

I roasted then peeled half a dozen of the Chilis then split them open to remove the seeds and whites.

After stuffing them liberaly with grated cheese I pinned them closed with toothpickes and battered them with Corn Flour. A nice thick coating. That was when I dropped them gently and lovingly in the deepfryer.

Oh man talk about a taste of heaven.

Try whipping up and egg and dipping the Relleno in the egg batter.

To get the best loft, beat the whites separately till they peak, then gently fold in the yolk - a copper bowl will give you the best results on the meringue.

I like to dice some onion into the cheese filling.

Did I tell you I love Chiles Rellenos? The only problem with them is you have to eat them right away while they still have a bit of a crunch, before they get soggy from the sauce.

I recently bought a small, rectangular deep fryer specifically for making Rellenos.
 
Damn, I just ate and now I'm hungry again. We have a local restaurant that mixes sauteed spiced porn oops pork in with the cheese. Oooh so good. Well, maybe this weekend.

just wondering how much the restaurant charges for that dish. ;) lol
