I bought some samples of authentic Vermont maple syrup. Didn't taste any different than the organic Costco maple syrup from Canada. I was sad.

The organic is much better.
A friend of mine in Canada has a certified organic maple bush lot.
It means that there is no chemical spraying of power lines within a number of miles from the area. many other specifications that could possibly leach to the area as well.
I thought, yeah, organic syrup...eyeroll, until he told me what was involved.
There are yearly checks on the whole thing.

The uncertified stuff could have any number of chemicals in it

I like organic. Vegetable usually taste better. I can't say I have tasted a difference with syrup, but it's been a long time since we have used anything other than Costco organic.

Hopefully he/she is a good friend. Syrup samples for life!

I don't believe it would taste different but it's just the knowledge that it is pure with no chemicals likely. I would think the residual overspray in a populated place would be quite extensive.
His product may be what you are buying at Costco.

And I haven't had to buy syrup in 40 years
