I need some help with a story. I know that when you work a grill in a resturant, you have to rub it down with this rock like substance in the shape of a brick. I don't know if they still do this today or not. but my question is , what was that rock like brick that was used to clean the grill. And did it have a nickname or slang term that people used to call it?
thanks for the help,
mikey

They're called grillstones. We didn't have any nicknames for them and as far as I know, they are still in use, although it's been about 15 years since I worked in a kitchen.

Yeah, grillstones or grillbricks. They're quite porus, and disintegrate easily. Also, if the grill is one like you'd see at home, with a rack, one would use a grill brush to clean it. Do both when the grill is hot.

The things I remember.
