I went grocery shopping in the wee hours last night. What should I eat and how would you have me prepare it if you were joining me for dinner?
 
I would enjoy the ribeye, tenderized only with the use of a meat mallet. A little pepper rounds it out, and cooked on the grill renders it perfect.
However, I am certain your presence would be what makes the meal, not your menu. :)

Ribeye of course. I like my meat.

Broiled. Spices: Worcestershire sauce, a little season salt, a couple quick sprinkles of garlic powder, and toss it in the oven. While it's cooking enjoy some bourbon. It goes great with steak. :D
 
All right, seafood lovers.. Come out!

Angus Ribeye- for me, I am will blacken it. I put assorted spices like lemon pepper, garlic powder, onion salt, and a lot of cayenne pepper. Then, I have an old black sheet pan that I put right on the burner and let it get so hot that it gets an ashy look to it. I throw down some butter, plop the bad boy on, and the smoke billows up like a smoke bomb.

I blacken fish the same way. You know it is real when you see the smoke- everything short of smoke is imitation.

The halibut... I need suggestions!

What if I marinated it in red wine vinegar and molasses and then broiled it. Would you still like it?

Really, halibut is good with what you say. Just a pinch of salt.

BUT- try it en papiotte with some artichoke hearts, black olives, and diced tomato.

I've never actually cooked halibut, but Smooth_Operator was telling me about something the other day he did with it that sounded fantastic. Of course, now that I need the information I can't seem to recall it. I hate that.

Does halibut smoke well? I think that's my favorite preparation of all fish. Oooooh shit, I just looked it up and found a recipe for Halibut in hazelnut butter. That's the winner!

And I'm with the others. A ribeye needs nothing more than salt & pepper for me. Lots of pepper. Grilled. Rare to medium rare. Mmm.

Ok, now that I'm all worked up I'm gonna go git my bbq shrimp in the oven.

Never tried smoking Hhhhhhalibut.

Nope no seasonings. I like grilled halibut kind of plain with a garden salad and rice on the side.
 
Unless it's sole I'm not a big fan of cooked fish. But my mom loves halibut seared and topped with a shery-cream reduction. Or she did before she gave up dairy.

I just ate the halibut a little while ago. It was delicious. I cooked it on the Lean Mean Grilling Machine then lightly bushed it with mixture of melted butter, fesh lemon juice, and capers.

Yummy. What a delicious fish.
 
I chose him out of thousands. The others were all too flat! :D

BTW Nora- I love pablanos. I like to stuff them with goat cheese and smoke them. Other cheese are good too, but I like goat cheese.
